Free-range whole duck (2.5 kilograms) slow-roasted for four hours in banana leaf with lemongrass, chilli, garlic, shallots and coriander served with gado-gado salad, taliwang sauce made with duck jus, sambal matah sambal hijau, colo-colo and coconut steamed rice.
Serves 4+ guests, availability is very limited.
